We chose the name “Castrum” as a tribute to “The Castle” located in Castelrotto in Valpolicella. A soft and well round wine obtained from the best Corvina grape variety laid drying for about 30 days. After a long fermentation in Slavonian oak casks, it has been aged in small French oak casks. A meditation wine with complexity suited to be paired with all meat dishes. Serve at 18°-20°C in large glass.
